Easy Mediterranean Pasta with Sun-Dried Tomatoes + Artichoke Hearts

We’re a big fan of home-cooked meals around here, but especially ones that feel like dishes from your favorite restaurants. This sun-dried tomato and artichoke pasta is simple and perfectly easy to make after a long day, whether you are making it for one or for the whole family.
Simply combine your favorite ravioli (we love sun-dried tomato or cheese!) with olive oil and your choice of Mediterranean-inspired vegetables to create a ravioli recipe that is an out-of-this-world pasta dinner in under 30 minutes.
Everything You Need to Make Mediterranean Pasta
Cheese Ravioli. A bit of cheese makes the perfect pasta.
Baby Portobello Mushrooms. Perhaps a more unusual ingredient in this dish, mushrooms help to add a complex, earthy flavor.
Red Onions. Sweet red onions add to the base of the white wine sauce.
White Wine. Add a fragrant, light flavor to this pasta.
Marinated Artichoke Hearts. Another light taste to add to this Mediterranean dish.
Kalamata Olives. These dark purple olives provide a fruity taste.
Sun Dried Tomatoes. With a chewier texture, sun-dried tomatoes supply a sweet and tart flavor.
Spinach. The perfect way to get an added helping of greens in your dinner.
Capers. We love a salty touch!
Olive Oil. The very base of this pasta dish.
Garlic. How could we ever leave out the garlic?
Crushed Red Pepper Flakes. Make it just a touch spicy, please.

Easy Ingredient Swaps
Change the ravioli for your favorite pasta. We think angel hair pasta, or even whole wheat spaghetti, would be great in this recipe!
Use black olives. If you prefer a milder taste than kalamata olives, switch them out for black olives.
Add fresh tomatoes. If you aren’t a fan of the chewiness that sun-dried tomatoes bring to this, you can easily add fresh cherry tomatoes. Just make sure to add them last so that they don’t become overly soft!
Use your favorite cheese. Not everyone loves the hard cheeses, and that is okay! Try using goat cheese or feta cheese instead as an ideal pasta addition.
How to Make Mediterranean Pasta At Home
Cook your pasta. In a large pot of salted water, cook ravioli pasta according to package directions. Set aside.
Heat up the garlic and oil. In a large skillet, heat olive oil, garlic, and crushed red pepper (to taste) over medium-high heat.
Cook your mushrooms and onions. Add mushrooms and onions, cook until tender, approximately 5 to 7 minutes.
Add your Mediterranean ingredients. Add artichoke hearts, kalamata olives, sun-dried tomatoes, and white wine to the pan, cooking approximately 2-3 minutes.
Add the veggies. Add spinach and capers. Toss well.
Stop the spinach from wilting. Remove mixture from heat when spinach begins to wilt.
Toss the pasta into the dish. Add ravioli to pan and toss well.
Add your cheese. Sprinkle Pecorino Romano on top.
Mediterranean Pasta Variations
Make It Vegan. Substitute the ravioli and cheese for vegan alternatives, such as Kite Hill almond milk ricotta tortellini or vegetable ravioli.
Make it a Mediterranean Pasta Salad. Use farfalle (bowtie pasta) instead of ravioli and place in the refrigerator for a shareable, perfect-anytime, cold pasta salad.
Mix Up the Vegetables. Feel free to make this your own by adding, removing or customizing the vegetables in this dish to suit your needs.
Add a Touch of Crunch. Another popular Mediterranean ingredient, pine nuts, would add a healthy, crunchy addition to this dish.
Add in Protein. Of course, this Mediterranean pasta would be made better by any inclusion of your choice of protein, such as: grilled chicken. ground turkey, or even falafel.
Gluten-Free. Use your favorite gluten-free pasta in lieu of ravioli.
