Strawberry Vanilla Almond Overnight Oats

Overnight oats are one of the quickest ways to start your morning routine. They can be made quickly the night before by combining your ingredients into a mason jar, filling with your choice of liquid (we like almond milk!), and simply letting it do its thing. The best part about this quick and easy breakfast is that there is no right or wrong way to make your healthy overnight oats. You can keep your overnight oats vegan, with peanut butter, chia seeds, greek yogurt, or fruit like banana or strawberries. We’re big fans of adding a scoop of Vital Proteins collagen peptides into ours for a kick of protein. The choice is up to you and the possibilities are endless.
Strawberry Vanilla Almond Overnight Oats
Ingredients:
- 1/2 cup old-fashioned oats
- 1/8 cup freeze-dried strawberries
- 1/8 cup sliced almonds
- 2 scoops Vital Proteins Collagen Peptides
- 1 cup almond milk (or milk of choice)
- 1 tablespoon vanilla extract
- 1 tablespoon chia seeds
- 1 tablespoon ground flax seed
- 1 teaspoon brown sugar
- 1 pinch pink Himalayan salt
- Dash of cinnamon
Instructions:
- In a medium mason jar, combine dry ingredients: old-fashioned oats, freeze-dried strawberries, sliced almonds, collagen peptides, chia seeds, ground flax seed, brown sugar, and pink Himalayan salt. Shake well.
- Pour the almond milk and vanilla extract over the mixed dry ingredients and shake well.
- Note: Make sure that the almond milk fully covers the oat mixture to ensure full absorption overnight.
- Dash cinnamon on top of mixture.
- Leave in fridge overnight.
