Refreshing Watermelon Mint Spritzer Cocktail

When we think of summer, we immediately think fresh fruit, especially watermelon. How many of us have childhood memories eating fresh watermelon and spitting the seeds at friends?

If you’re already in the mood for a light and fun summer cocktail for hanging by the pool or a casual party, this mint watermelon cocktail is perfect. We prefer ours with vodka, but it’s delicious when mixed with gin or rum to make a watermelon mojito. The sweetness of the drink comes from the smashed watermelon puree, and it’s topped with sparkling water from Waterloo, which means that this summer watermelon cocktail is low-calorie and sugar-free!

Note: If you don’t have Waterloo at your local grocery store, you can achieve the sparkling watermelon cocktail by adding soda water or Topo Chico.

We also are huge fans of any cocktail that can quickly modified to suit anyone. If you prefer a sweeter cocktail, or are looking to cut back on your carbonation, simply substitute the soda water for lemonade or limeade for a sweet boozy watermelon lemonade.

A refreshing, fruit drink, perfect for a summer outing or poolside sip!

Ingredients:

  • 1.5 ounces of Tito's Vodka (or your choice)
  • 1/2 ounce St. Germain*
  • 1 ounce of watermelon puree
  • 3-4 mint leaves
  • 1 can of Waterloo Watermelon Sparkling Water
  • Can also be substituted with soda water or Topo Chico for a seltzer spritz
  • If you like it sweeter, try adding lemonade/limeade instead for a boozy Watermelon Lemonade
  • 1 lime

Instructions:

  1. Take a freshly cut watermelon and make sure to remove all the seeds. Place the cubes in a blender and pulse gently to puree.
  2. In an old-fashioned or rocks glass, place the mint leaves, Tito's vodka, St. Germain, and watermelon puree and muddle together, making sure to crush the mint leaves well.
  3. Fill a shaker full with ice and our the vodka mixture in an shake well. Pour over ice.
  4. Fill the remainder of the glass with sparkling water (optional: unflavored or flavor of your choice)
  5. Squeeze the juice of one lime on the top.
  6. Garnish with additional mint or lime.
